One evening before leaving for a trip, I needed to make dinner and wanted to use ingredients already in the fridge and pantry. The items in the refrigerator would probably not be any good when we returned, so I needed to be a little creative.
Ingredients:
- 1 head of cauliflower (chopped into bite size pieces)
- 2 medium carrots (sliced into bite size pieces)
- arugula
- feta
- curry powder
- salt and pepper
- olive oil
- ready-bake cheese pizza
Preheat the oven to 425 degrees. Put the chopped cauliflower and carrots into a bowl with curry powder. I suggest between 1-2 teaspoons- depending on your personal preference. Mix the ingredients with about 2 tablespoons of olive oil- just enough to lightly coat the vegetable. Then, spread out the cauliflower and carrot mix on a baking sheet. Bake for 20 minutes. (If you cut larger pieces, you may want to bake for 25 minutes). Pull from the oven and let the vegetables cool while baking the ready-bake cheese pizza.
Allow the pizza to cool for 5 minutes once pulled from the oven. Then, top with arugula and the baked curry vegetables.
Finally, top with feta and enjoy!
