A little late getting this posted, my apologies! This is the sauce I made for the empanadas, but can also be used or re-purposed for other dishes. (I added olive oil and made it into a dressing for an orzo pasta salad the next day.)
- 3 garlic cloves
- 1/3 cup of chopped cilantro
- 1 serrano pepper- seeds removed (can also use jalapeno instead)
- 1 lime
- 1 cup of olive oil based mayonnaise
In a blender, squeeze as much juice from the lime as possible. Add the garlic cloves and pepper and blend. Next, add the mayonnaise and cilantro and just pulse a few times. You do not want the cilantro to pulverize completely. Depending on the consistency you prefer, you may add a little water or olive oil- your choice on the type of sauce you want to make. Salt to taste and serve!
As mentioned, I took the leftover sauce and whisked in olive oil until it became a thin dressing for an orzo pasta salad the next day. You could also use the dressing for a salad or over grilled shrimp. Be creative and have fun 🙂
